SODA- Earth friendly and economical? WOW 

Economical earth friendly alternatives are great things that I count as a privilege to share with others. So, when fellow blogger friend from Closer to Lucy told me about Soda Stream Soda Makers I just had to give the products a try. I am so glad that I did. My family and I have had great fun making our own soda at home. I don’t have to lug heavy cans of soda home, each liter of soda cost about .25 to make and since I’m using tap water we’re cutting down on the plastic use in our home too.

Glazed Lemon Cake Made with Soda Stream Soda Maker

It's a beautiful day here in Tennessee. The sun is shining, the leaves are falling, and I thought it would be a great day to bake a Lemon Glazed Cake. It is a good time to try out some Lemon Lime Soda made from my Soda Stream Soda Maker . I mentioned Soda Streamon another recent post.
 I was in the middle of making the cake when I realized I didn't have any lemon lime soda on hand, which prior to having the Soda Stream Soda Maker would have made my Lemon Glazed Cake a flop. In about 30 seconds I was able to whip up a liter of lemon lime soda. I only needed a cup so when Riley gets home from school he will be able to have his favorite soda with a wrap before he's off to his basketball game. I thought I would post the Lemon Glazed Cake Recipe for anyone who would like to give it a try. The cost is about .22 per serving. The economical cost of this cake puts a big smile on my face when I see how much my whole family enjoys it. 
Glazed Lemon Cake
1 package (18-1/4 oz.) white cake mix
1 package (3.4 oz) instant lemon pudding mix
3/4 vegetable oil (I use applesauce)
3 eggs (I use 1 whole egg and 2 egg whites)
1 cup of lemon-lime soda
1 cup confectioners' sugar
2Tbsp. lemon juice

In a mixing bowl, combine the cake mix, pudding mix, oil (applesauce) and eggs. Beat on medium speed for 1 minute. Gradually beat in soda. Pour batter into 9x13 greased baking dish. Bake at 350 degrees for 40-45 minutes or until cake springs back when lightly touched in center.
Combine confectioners' sugar and lemon juice until smooth, carefully spread over warm cake cool on a wire rack. Yield:  12 servings (.22 per servings)
